Typically, in the process of saccharifying malt and creating wort, there’s a filtration step before fermentation and distillation. However, at Kurabuchi Distillery, we’ve successfully created a flavorful whisky by developing our unique “non-filtered method” that omits this filtration step. In the spirit of tea ceremony as advocated by Sen no Rikyu, there’s a teaching called “shu-ha-ri.” It means first mastering the basic form, then incorporating your own ideas to express individuality. Similarly, Kurabuchi Distillery has achieved its ideal, one-of-a-kind whisky by incorporating brewing and distillation techniques cultivated since the Edo period into the fundamental whisky production methods.
